Savory & Sweet (Sweet) Potato Toast

Salty, Sweet Combo CHECK. I love these toasts for breakfast, lunch, or dinner. You get the best of both worlds and they both melt in your mouth. 

Ingredients For Avocado (Savory) Toast:

- 1 long way slice of an organic sweet potato

- 1 tpsp of organic unrefined coconut oil (to coat pan to bake sweet potato)

- 1/2 of an organic avocado

- 1 tsp of organic unrefined olive oil 

- 1 tsp black sesame seeds

- Himalayan salt to taste

- Pepper to taste

Ingredients for Almond Butter Toast:

- 1 long way slice of an organic sweet potato

- 1/2 of an organic banana

- 1 tbsp of organic dry roasted almond butter (I love Once Again Organic Creamy Almond Butter)

- 1 tbsp of unsweetened toasted coconut flakes

- 1 tsp of organic cinnamon

- 1 tsp of organic cacao nibs (I love Navitas Organics)

Instructions:

For sweet potatoes: Preheat oven to 380. Coat a baking sheet with coconut oil. Slice long ways 1 sweet potato and grab the two best slices (mimicking toast). Place onto pan and then into oven. Cook for 30 minutes, then turn over and cook for another 30 minutes. 

For the avo toast: In a small bowl mash the avocado. Add olive oil, salt and pepper to taste. Then smudge over the sweet potato toast slice and top with black sesame seeds.

For the almond butta toast: spread almond butter over the other sliced sweet potato toast. Add sliced bananas, cinnamon, coconut flakes and cacao nibs on top.
